Tara Gum
Tara Gum originally from the endosperm of the Pervian tree seed called Tara (Caesalpinia spinosa), this polysaccharide is composed by mannose and galactose.
Characteristics:
Cold soluble, furthers maximum viscosity in aqueous, lacteal systems, in systems of low solidity in the matter of a few minutes.
Actions:
Works as thickener, an agglomerator, stabilizer, and retains moist.
Has the advantage of being colorless, insipid, highly stable, and reveals excellent synergy with other gums.
Application:
Dairy products: ice creams, milk drinks, milkshake powders, desserts, fruit preparations;
Confection products: candies, chocolate bonbons, confections. Etc.
Condiments: ketchup, mustard, seasonings, emulsified sauces, non-emulsified sauces.
Bakery Products: bread, cakes, cookies and crackers, etc.
